Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this masterpiece of Italian culinary tradition. On request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price

Guido fin da prima dell’inizio dell’esperienza è stato un fantastico host, ci ha descritto molto bene come raggiungere la sua acetaia e si è dimostrato super disponibile nei nostri confronti. Dopo averci accolto presso la sua tenuta, siamo stati catapultati più che nella sua attività nella sua passione: l’aceto balsamico di Modena DOP tradizionale. Oltre ad essere una persona molto competente, si è dimostrato una persona ricca di esperienza e di dedizione per il proprio lavoro. Porta avanti personalmente con entusiasmo e amore una tradizione familiare. Gli assaggi che ha previsto per noi sono stati graditissimi e veramente di qualità, dulcis in fundo l’assaggio del gelato con il balsamico extra vecchio.....INDIMENTICABILE. Consigliamo vivamente questa esperienza per chi si trova a trascorrere qualche giorno tra Modena e dintorni.

You have to go! Honestly one of the most interesting and enjoyable experiences we have been on. Guido was amazing, he is so passionate and knowledgeable. We learnt a lot about the traditional balsamic vinegar and felt a true sense of the heritage, passion and love involved in making each batch. Un'esperienza assolutamente da non perdere! Una delle più interessanti a cui abbiamo partecipato. Guido è un gran personaggio ed è stato super, non solo per la conoscenza sull'argomento, ma per la grande capacità di trasmettere la sua passione. Everything was so well thought through and the experience was so wonderful! I learned a lot and it was food for your soul and mind, of course on top of all that wonderful food and balsamic vinegar! I recommend even just driving 2 hours to get to Guido and his experience!

A wonderful experience! I will never think of balsamic in the same way again. So much to learn and the story/process is actually very moving (something I wasn't expecting) . Guido's passion is heartwarming - highly recommend this experience. He makes you feel like a guest in his home and I'll always look back at the afternoon with fond memories.
