Cooking classes in Mexico can be a wonderful experience, but what happens when you return home and can't find the ingredients to make it on your own? I've got you covered.
We'll meet for a tour of Mexico City's exotic market—Mercado San Juan. I'll give the highlights of its history and we'll stop by a few of my favorite vendors where you'll have the chance to sample and/or purchase seasonal fruits & veggies, chiles, spices, mezcal, and the pre-hispanic protein staple—insects!

From there it's a short walk to my kitchen in Centro Histórico where we'll get down to some hands-on cooking!

We'll learn how to prepare* (and chow down on):

/ Classic Tinga (chicken or veggie)
/ Tamales (savory and sweet)
/ Chilaquiles (verde)
/ Agua fresca (varies according by season)

I'll also give a brief knife handling demo for those who would like it, facts about our ingredients, cooking techniques, uses for would-be-organic waste, nutrition and gut health information, as will follow up afterwards with a digital recipe book and global guide to Mexican ingredient shopping with brick & mortar as well as online resources.

I recommend booking towards the beginning of your trip so you can take advantage of our time together and ask for any suggestions you may like for the rest of your trip.

I started working in my grandfather's butcher shop at the age of 6, wrapping customers' packages in the same style as he had since the 1940's. Surrounded by nature, we spent our free time hiking, camping, fishing, and hunting. The dichotomy of the two food systems—self-sustainable vs. supermarket—inspired me to only eat the things I could grow or hunt, and cook myself.

I've maintained some form of this ideology for the past 29 years while traveling the world to gain knowledge and hone my skills. At 21, I began making the world my culinary classroom by making pasta with Italian experts in Florence, apprenticing with a Four Seasons/Cordon Bleu chef, sous cheffing a test kitchen in NYC, mastering luau emus with native Hawaiians, and now pressing tortillas with the abuelas and street food masters of CDMX.

You'll be surrounded by some of the best street food and better kept secrets in the city: 2 blocks from the Zócalo, around the corner from la Pastelería Ideal, el Moro, and one of the city's most exciting markets, Mercado San Juan (the "exotic" or "insect" market) where our class begin!.

This was an awesome experience with Tim!! We started by going to the market where we picked up ingredients for our meal, while getting to sample various fruits, insects(!), espresso, and getting heaps of knowledge from Tim throughout. Then, we went back to Tim’s place to prepare an amazing meal from scratch, telling stories, and having an overall great time. Tim is kind, patient, and willing to go at whatever pace the group feels like. This was a great way to start our CDMX trip with all of his helpful advice!

Tim was amazing. He emailed us prior to our experience with restaurant ideas that ended up being some of our faves. He is knowledgeable and passionate about food. We really enjoyed the market walkthrough, we had the opportunity to buy spices other goodies. The class was amazing as well. We learned so much and had a wonderful time with Tim. Don't hesitate to book if you enjoy open markets and food.

This experience was absolutely fantastic!! Tim was so knowledgeable. He shared his knowledge not only on how to prep food but also about the history connected to the food we were preparing. We loved every bit of this experience and highly recommend it if you're in Mexico city!! Thank you for such a lovely time!

From the moment you meet Tim, you so clearly see how he exudes a passion for food and you immediately join him on the journey of exploring the history of Mexican cuisine. He has created an immersive experience that feels extremely authentic to both his food adventure through life and to you as a visitor in this incredible city. After touring the market and eating exciting foods, we went back to Tim's apartment to learn how to cook some of the most incredible Tamales and other amazing foods I have ever eaten. He shows you what to do but trusts you to push ahead. We had the most amazing day with Tim and I highly recommend this to everyone and anyone looking for an authentic food experience that ALSO tastes incredible. Lastly - the people were amazing!

This was a wholesome experience where we learned about the dishes and cooked them as well….Tim was very knowledgable about the culture and the food…Would recommend to anyone who is in the city

Tim is very knowledgeable about the history and qualities of the food he teaches you to make. He is friendly and the experience is a fun break from other tourist activities.
