L'Osteria del Chichibio (High End Seafood) "If you want to eat fish and want to eliminate the risk of any disappointment, then you should visit the Chichibio fish restaurant in Polignano a Mare". This was the sentence that the well-known gastronomic journalist Sandro Romano wrote about us a few years ago on the pages of La Madia Travelfood. We don't like to be self-referential, but we just can't hide our passion for seafood. Those who know us (and have been here for lunch or dinner), can only confirm how much attention we put into choosing the best raw material: we only use fish that is caught and not farmed; you can have proof of this by crossing the entrance to our fish tavern. Secondly, the obsessive respect in cooking: all the preparations of our chef are only and exclusively elegant and respectful touches of the cooked product. And then the raw fish so loved by our customers: carpaccio and "seasonal" fish tartare caught and brought to the table in its most natural and tasty form. A fish cuisine that skilfully combines with the vegetables and smells typical of Mediterranean cuisine and that gives life to dishes of great appeal.
